Found an old recipe for Angel Cake that doesn't take a dozen egg whites. This one only takes 4!
2 cups white sugar
2 cups flour
6 tsp baking powder
4 egg whites
pinch of salt
Sift dry ingredients 5 times, I know it sounds redundant, but do it anyway, the cake will turn out better if you do. Stiffly beat egg whites.
Heat milk to boiling. Remove from heat. Stir in dry ingredient, until smooth. Fold into stiffly beaten egg whites.
Pour into an ungreased angel pan and bake at 375F for 40-45 minutes. Invert pan until cool.
